Carrot Cake Energy Bites

Ingredients
- 1 cup rolled oats
- 1 cup Cal-Organic Shredded Carrots
- 1/2 cup almond butter
- 1/4 cup pure maple syrup
- 1/4 cup cream cheese
- 1/4 cup raisins
- 1 tsp vanilla extract
- 1 1/2 tsp pumpkin pie spice
- Pinch of salt
- 12 oz white chocolate chips
- 2 tsp coconut oil
Directions
- In a large bowl, combine the energy bites batter ingredients and mix well.
- Line a baking sheet with parchment paper. Using slightly wet hands (so the batter doesn’t stick to you), form the mixture int small balls, about 1 inch in diameter. Place them on the parchment-lined baking sheet.
- Place the energy bites in the freezer for 15 minutes.
- In a double-broiler pot, heat your chocolate mixed with coconut oil (the coconut oil makes it melt more smoothly). Stir to ensure it’s not burning, and remove from heat.
- Dip your energy bites into the melted chocolate and place back on the parchment paper. Allow the glaze to set by putting back in the freezer for another 15 minutes. Store in freezer, and enjoy!
