Carrot Cake Jars

Ingredients
- 2 1/2 cups Cal-Organic Shredded Carrots
- 4 eggs
- 1 cup sugar
- 1/2 cup coconut oil, melted
- 1 tsp. vanilla extract
- 1 tsp. cinnamon
- 1 1/2 cups flour
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- Cream cheese frosting
- Shaved carrot, to garnish
Directions
1. Preheat oven to 350° Fahrenheit.
2. Coat six, 8 oz mason jars with cooking spray and place on a baking sheet.
3. In a large bowl, add the sugar, coconut oil, shredded carrots, eggs, vanilla and cinnamon. Whisk together gently, then add in the flour, baking powder and baking soda. Mix until combined.
4. Pour the batter into the mason jars until they’re about half full. Bake for 30 minutes.
5. Let the jars cool for 10 minutes. Add the cream cheese frosting and garnish with shaved carrot. Enjoy!
